Broiled wild salmon
4 (4-6 oz fillers)
Place 4 (4-6 oz) wild salmon fillets in a baking pan. Season with olive oil, lemon zest, salt and pepper to taste. Let come to room temperature for 30 minutes. Preheat the oven broiler and set the oven rack about 6 inches from the heat source. Cook for three minutes, turn and cook for another three minutes. Remove from oven and let it rest for 5 minutes before serving.
