Greens with garlic and bacon
Serves 4-6

Two bunches of greens of choice (kale, chard, mustard greens, spinach), ribs removed and roughly chopped.
1 or 2 garlic cloves, minced
Extra virgin olive oil
Sea salt
Black pepper
2 strips of sugar free bacon , cut into ¼ inch strips

Add bacon to warm skillet and cook until browned. Remove to drain on paper towels Drain pan and wipe out bacon fat. Add olive oil over medium heat, when the oil is starting to ripple, add the garlic, cook for about 1 minute and add the greens little by little. Cook until they are tender. Season to taste and add the drained bacon.  

If you skip the bacon, start with olive oil step.
