Coconut sesame granola
My mom was busy making granola this week and it was just too pretty not to share. I should also mention that it is perfectly delicious ; )
My mom's Coconut Sesame Granola
3 cups rolled oats
1 cup unsweetened coconut flakes
1 cup walnuts
1/4 cup sesame seeds
2 TBS extra virgin olive oil
1/2 tsp sea salt
1/2 cup grade B maple syrup
1/4 cup raw honey
1 egg white
1/4 tsp ground cinnamon
1 1/2 cup dried fruit: chopped figs,cherries, raisins, or cranberries
To serve: unsweetened whole milk yogurt
Preheat oven to 300'. Line a baking sheet with parchment paper. In a large bowl mix together oats, coconut, walnuts, sesame seeds, olive oil, salt, maple syrup, honey and cinnamon. Whisk egg white until frothy. Add to granola and stir together trying to form clumps. Spread onto baking sheet and cook for 40 minutes or until golden brown; rotating pan halfway in and peeking in every 5 minutes or so to give things a stir and make sure it's browning evenly and not burning. Remove from oven and let cool. Mix in dried fruit. Keeps in airtight container for 1 week.
